I made up a new recipe today, and it made such a light and tasty meal for a hot summer day.
Total prep time: 20 minutes Yields 2-4 servings
Ingredients needed:
8 oz rotini (spiral) pasta 1/4 C. olive oil
1/2 medium red onion (diced) 1/4 tsp lemon juice
1/2 medium red pepper (diced) 1/4 tsp white vinegar
3 large mushrooms (sliced) 1/2 tsp garlic salt
1 small tomato (diced) 1 tsp pasta seasoning blend
3 slices ham (diced) 1/4 tsp oregano
1 oz Mozzarella cheese (cut into small cubes)
small handful of cilantro (diced)
Directions:
Boil water with a dab of olive oil and a dab of garlic salt. Add spiral pasta and cook according to package directions. Meanwhile grill the red onion, red pepper, and mushrooms on the Panini Grill (or saute on the stove if you don’t have a Panini Grill). Place the tomato, ham, Mozzarella cheese, and cilantro in a medium serving bowl. Add the grilled vegetables to the bowl and mix together. When the pasta is ready, drain the excess water. Add the olive oil, lemon juice, vinegar, garlic salt, and pasta seasoning blend to the pasta while it is still in the pan and mix well. Then pour the pasta into the vegetables and mix together. Season with the oregano and serve while the cheese is still melted.
